Strawberry and rhubarb complement the flavor of tart aronia in homemade jam.

Ingredients

  • 4 to 5 pounds of fresh Aronia berries
  • Honey

Directions

  • Pour berries into a large stockpot and mash them.
  • Place the pot on the stove and slowly bring the berries to a simmer over medium-high heat.
  • Continue to mash the berries as they heat until they’ve released most of their juices. This process should take 10 to 15 minutes.
  • Strain the juice and berries through a strainer bag suspended over another container. Be sure to squeeze the bag and get all the juice out.
  • To every 5 parts finished juice, add 1 part honey.
  • Store the juice in the refrigerator.
