Strawberry and rhubarb complement the flavor of tart aronia in homemade jam.
Ingredients
- 4 to 5 pounds of fresh Aronia berries
- Honey
Directions
- Pour berries into a large stockpot and mash them.
- Place the pot on the stove and slowly bring the berries to a simmer over medium-high heat.
- Continue to mash the berries as they heat until they’ve released most of their juices. This process should take 10 to 15 minutes.
- Strain the juice and berries through a strainer bag suspended over another container. Be sure to squeeze the bag and get all the juice out.
- To every 5 parts finished juice, add 1 part honey.
- Store the juice in the refrigerator.
