Baked Okra Recipe

This recipe avoids boiling or braising, which is what renders okra gelatinous. With a crunchy coating and quick baking, the fresh flavor and crisp texture of okra is preserved. Even kids love this dish! Serves 8.

Ingredients

  • 4 cups sliced okra
  • 1 egg, beaten slightly
  • 1 cup cornmeal
  • Salt and pepper

Directions

  1. Heat oven to 450 degrees Fahrenheit. Cover a baking sheet with aluminum foil; lightly grease the foil. Set aside.
  2. In a medium bowl, mix the okra and beaten egg. Add cornmeal and toss until okra is well-coated, adding more cornmeal if necessary. Pour onto the prepared baking sheet. Season with salt and pepper.
  3. Bake for 15 minutes. Remove from oven; turn okra, breaking apart any that have stuck together. If necessary to prevent sticking, add a small amount of oil and stir. Return to the oven and bake for 15 minutes more, until golden brown.
