Any winter squash will work for this recipe. We recommend acorn or butternut.
Ingredients
- 1/4 cup honey
- 2 tablespoons soy sauce
- 1 clove garlic, minced
- 1/2 teaspoon salt
- 1/4 teaspoon pepper
- 2-1/2 pounds winter
Directions
- Whisk the first five ingredients together in a large bowl.
- Halve each squash crosswise, peel and scoop out seeds.
- Cut into 1/2-inch-thick rings and toss in honey mixture until well coated. Can be covered and refrigerated for up to 6 hours.
- Arrange squash rings on a greased, foil-lined, rimmed baking sheet and drizzle with honey mixture.
- Bake in preheated 400 degrees F oven, turning once and basting with liquid, until tender and golden, about 30 to 40 minutes.
