Kraut Salad Recipe

The Amana Colonies of Iowa would produce hundreds of pounds of sauerkraut every year, kraut salad is just one of the dishes they used it in.

Ingredients

  • 1/3 cup canola oil
  • 1/3 cup white wine vinegar
  • 1 cup sugar
  • 2-1/2 pounds sauerkraut, rinsed and squeezed dry
  • 1/2 cup chopped onions
  • 1/2 cup chopped green peppers
  • 1/2 cup chopped red peppers
  • 1/2 cup chopped celery
  • 1/2 cup carrots, cut into small dice
  • 1/2 teaspoon celery seed

Directions

  • Beat oil, vinegar, and sugar over low heat until sugar is dissolved.
  • Combine remaining ingredients and pour syrup over mixed ingredients. Stir to coat all ingredients well and refrigerate overnight for best flavor.
