Pita bread and vegetables make a great accompaniment to this easy-to-make hummus dip.
Ingredients
- 15 ounces cooked chickpeas
- 1 sweet red pepper, chopped
- 3-4 cloves garlic, smashed
- Juice of 1 lemon
- 1/3 cup tahini
- 1/4 cup cilantro
- 1/2 teaspoon sea salt
- 2-3 tablespoons water
Directions
- Combine all ingredients except water in a food processor and whiz. Add water through the chute as it processes. If it’s too thick, add a little more water or lemon juice to loosen. Taste, and adjust seasonings and liquid if necessary.
- To serve, drizzle with a little extra virgin olive oil and garnish with some minced cilantro. Serve with crudites and toasted pita bread or crisps.
