Red Pepper Hummus Recipe

Pita bread and vegetables make a great accompaniment to this easy-to-make hummus dip.

Ingredients

  • 15 ounces cooked chickpeas
  • 1 sweet red pepper, chopped
  • 3-4 cloves garlic, smashed
  • Juice of 1 lemon
  • 1/3 cup tahini
  • 1/4 cup cilantro
  • 1/2 teaspoon sea salt
  • 2-3 tablespoons water

Directions

  • Combine all ingredients except water in a food processor and whiz. Add water through the chute as it processes. If it’s too thick, add a little more water or lemon juice to loosen. Taste, and adjust seasonings and liquid if necessary.
  • To serve, drizzle with a little extra virgin olive oil and garnish with some minced cilantro. Serve with crudites and toasted pita bread or crisps.
