Root beer tea is less rich than a root beer float, but it's still full of the flavor that makes the dessert a favorite.
4-1 cups SERVINGS

Ingredients

  • 2 tablespoons sarsaparilla root
  • 1 tablespoon sassafras bark or root bark
  • 1 tablespoon chickory root
  • 1/2 tablespoon cinnamon, ground or chipped
  • 1 quart water

Directions

  • Combine all ingredients in a 2-quart stockpot.
  • Bring to a boil, keeping the pot covered. You’ll need to allow steam to escape occasionally, as the saponins in the sarsaparilla will create soap bubbles that will try to escape and make a mess.
  • When the water boils, reduce the temperature to low and simmer for 10 to 15 minutes, keeping the pot covered as much as possible.
  • Remove from heat, strain, and serve.
