Squash slices make and excellent substitution for lasagna noodles.
Ingredients
- 3 cups cooked spaghetti squash
- 2 cups marinara sauce
- 1 cup ricotta
- 6 ounces shredded mozzarella
Directions
- Roast spaghetti squash until tender.
- Make two layers in an 8” x 8” pan in the following order: marinara, squash, ricotta.
- End with marinara and top with mozzarella cheese.
- Cover, bake at 350 degrees Fahrenheit for 20 minutes, remove foil and finish baking until cheese is melted.
