Spaghetti Squash Lasagna Recipe

Squash slices make and excellent substitution for lasagna noodles.

Ingredients

  • 3 cups cooked spaghetti squash
  • 2 cups marinara sauce
  • 1 cup ricotta
  • 6 ounces shredded mozzarella

Directions

  • Roast spaghetti squash until tender.
  • Make two layers in an 8” x 8” pan in the following order: marinara, squash, ricotta.
  • End with marinara and top with mozzarella cheese.
  • Cover, bake at 350 degrees Fahrenheit for 20 minutes, remove foil and finish baking until cheese is melted.
